Watermelon gazpacho will cool you down in no time. Here's how to make it
Gazpacho is a cold soup originating from Spain, ideal for warm days. Traditional gazpacho is made with tomatoes, cucumbers, peppers, onions, garlic... But there is also a fruity version - watermelon gazpacho. Watermelon gazpacho is a sweet and fruity version that adds an extra note of refreshment and sweetness.
For watermelon gazpacho, you will need half a kilo of watermelon (seedless), 4 tomatoes, 1 cucumber, 1 red pepper, 1 small red onion, 1 clove of garlic, 2 tablespoons of olive oil, 1 tablespoon of red wine vinegar, salt, pepper, and fresh basil.
Here's how you can prepare it:
- cut the watermelon into cubes
- peel and chop the tomatoes, cucumber, pepper, onion, and garlic
- blend all the ingredients in a blender
add olive oil, vinegar, salt, and pepper, then blend until smooth
- place the gazpacho in the refrigerator and let it chill for at least one hour
- garnish with basil and serve cold.
